Zucchini Bread

Zucchini bread is very moist and freezes well. You can add chocolate, pears, cranberries or anything to zucchini bread.


  • 1 1/2 cup all-purpose flour
  • 1 1/2 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cup white sugar
  • 1 tablespoon vanilla extract
  • 3 cup grated zucchini
  • 1 cup chopped walnuts


  1. Grease and flour 2- 8x4 inch loaf pans. Preheat oven to 325.
  2. Sift flours, salt, baking soda, baking powder and cinnamon in a large mixing bowl.
  3. Beat eggs, oil, sugar and vanilla in a separate bowl. Add dry ingredients to wet and stir gently until combined. Add zucchini and nuts and stir again.
  4. Pour batter into prepared pans and bake for 40-60 minutes until toothpick inserted comes out clean.
  5. Cool for 20 minutes.
