Zucchini Bread
Zucchini bread is very moist and freezes well. You can add chocolate, pears, cranberries or anything to zucchini bread.
Ingredients
- 1 1/2 cup all-purpose flour
- 1 1/2 cup whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 cup white sugar
- 1 tablespoon vanilla extract
- 3 cup grated zucchini
- 1 cup chopped walnuts
Instructions
- Grease and flour 2- 8x4 inch loaf pans. Preheat oven to 325.
- Sift flours, salt, baking soda, baking powder and cinnamon in a large mixing bowl.
- Beat eggs, oil, sugar and vanilla in a separate bowl. Add dry ingredients to wet and stir gently until combined. Add zucchini and nuts and stir again.
- Pour batter into prepared pans and bake for 40-60 minutes until toothpick inserted comes out clean.
- Cool for 20 minutes.
