Coconut Balls
Ingredients
- 1/2 C. raisins
- 3/4 C. walnuts
- 1/2 C. dried dates, pitted
- 1/2 C. dried apricots
- 2 T. orange juice
- 1 tsp. zest of one orange
- 1 small bag unsweetened shredded coconut
Instructions
- In a food processor, process raisins, walnuts, dates and apricots for 1-2 minutes or until finely chopped.
- Add juice and zest and blend for 1-2 minutes more.
- Chill mixture in refrigerator for 15 minutes.
- Dampen hands, form mixture into balls, and roll them in coconut.
- Store balls in refrigerator.
