Chick Pea Pasta Salad

Serving Size: Serves 10

Ingredients

  • 4 tablespoons wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons sugar
  • 1/2 teaspoon oregano
  • 4 tablespoons oil
  • 2 cups cooked pasta (bow ties, shells, ziti, etc.)
  • 2 cups canned chickpeas
  • 4 tablespoons parsley, chopped
  • 1/4 cup pimento, diced

Instructions

  1. In a large bowl combine vinegar, salt, pepper, sugar, oregano, and oil.
  2. Add pasta, chickpeas, chopped parsley, and pimento.
  3. Refrigerate for a few hours before serving.
